Microwave Blueberry Jam

Are you looking for a quick way to make jam without any added preservatives? Try this easy microwave blueberry jam that can be done in less than ten minutes in your microwave. I had some overripe blueberries at home and didn’t want to waste them, so I decided to try a jam with them. I pureed the blueberries, a banana, sugar and some spices – and with some heat from the microwave, I had a delicious jam made in less than ten minutes!

Using fresh ingredients for jam is super easy, and the microwave provides the heat needed to make a thick and sweet jam that is delicious in yogurt, on toast or used to spread on pancakes. Do you want your little one to help? Have him puree the fruit in the blender with the additional ingredients. Be careful when mixing the jam while cooking – it gets hot!

According to Allison Topilow, MS, RD, CDN, Nutrition Consultant, blueberries are full of antioxidants and also provide fiber and Vitamin C. Boost your potassium from the banana and enjoy the delicious flavors of the cinnamon and vanilla while keeping the added sugar to a minimum.  I love that this recipe is preservative-free and quick and easy to make!

Ingredients
2 cups fresh blueberries
1/4 cup granulated sugar
1 ripe banana
1/2 teaspoon of ground cinnamon
1 teaspoon of vanilla extract
squeeze of a fresh lemon (optional)

Preparation

  1. In a blender, puree blueberries, sugar, banana, cinnamon, vanilla and lemon juice.
  2. Pour contents into a microwave safe bowl (preferably a glass microwave bowl). Microwave for two minutes at a time for the first four minutes. Make sure to stir the jam well throughout the cooking process. After that, microwave the jam one minute at a time and stir after each minute. Cook until desired thickness!
  3. Pour into a jar and enjoy.

Makes enough jam for two small jars.
