Roasted Cauliflower Soup

Anyone as excited as I am about the impending snow? It’s about time, right?

To me, the best part is being home-bound with my family, with nowhere to go and nothing to do – just complete relaxation and togetherness!

And I love cooking up some good old comfort food. Hot chocolate for the kids goes without saying, but my favorite thing to prepare is a hot, nourishing soup.

Enter Roasted Cauliflower Soup – delicious AND nutritious!

Organic Cauliflower
Roasted Cauliflower Soup

Ingredients

1 large head cauliflower, cut into florets
4 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 large garlic clove, minced
1/2 cup onion, chopped
1/2 cup carrots,chopped
1/2 cup celery, chopped
3 tablespoons whole wheat flour
2 cups broth (chicken or vegetable)
1 cup milk (I use almond milk to keep it dairy free)

Directions

  1. Preheat oven to 450 degrees.
  2. Put cauliflower in a small roasting pan. Cover with 2 tablespoons of the oil (I like to brush it on with one of these), and sprinkle the garlic powder, onion powder, and salt on top.
  3. Roast the cauliflower in the preheated oven until golden brown, 30 to 40 minutes. Remove from the oven and set aside.
  4. Pour the other 2 tablespoons of oil in a large saucepan over medium heat. Add the garlic and stir for 2 to 3 minutes. Add the chopped onion, carrots, and celery. Cook until softened, stirring constantly, about 10 minutes.
  5. Sprinkle the flour over the onions/celery/carrot mixture and stir to coat. Slowly add the chicken broth and milk. Mix until all of the flour is dissolved. Bring to a boil while stirring continuously, then reduce heat to low. Add the roasted cauliflower and simmer, covered, for 10 minutes.
  6. Use an immersion blender or pour it into a regular blender to make it a creamy consistency. Feel free to add more broth if you like a thinner consistency.
