Banana Jam

Do you love bananas? Do you want to make a nice gift for your child’s teacher for the end of the year? Make banana jam! It is super easy to make and you need no equipment to make it (besides a saucepan).

Bananas are healthy, easy to find and not expensive, which makes them an ideal ingredient to bake with. I love bananas and have been experimenting for a long time, trying to find the right recipe for this jam. The jam is so easy to make that children can easily help with the recipe. They can help mash the bananas and mix all of the ingredients together. An older child can help you cook the jam over the stovetop.

The jam is perfect on a toast, muffin or pancakes. I love it with almond butter on an English muffin. The next time you make crepes, fill them with this jam and some nutella. Yum!

According to Allison Topilow, MS, RD, CDN, Nutrition Consultant, bananas are delicious and nutritious! They are high in potassium, which helps regulate blood pressure and may also help prevent muscle spasms. The fiber in bananas will help keep you satiated until your next meal or snack. Try this delicious banana jam on a whole wheat waffle or toast with peanut, almond, or sunflower butter. You can also add a spoonful to plain low-fat yogurt for a little sweetness.

Ingredients:
2 ripe large bananas (mashed) or 3 small bananas
1/4 cup of light brown sugar
1/4 cup of granulated sugar
fresh lemon juice of 1 lemon
1 teaspoon of cinnamon
1/2 teaspoon of ground allspice
1 teaspoon of pectin
1 teaspoon of vanilla extract
1/2 teaspoon of maple extract (optional)

Preparation:

  1. In a saucepan, combine all ingredients.
  2. Simmer jam while stirring constantly for about 10 minutes until thick.
  3. Pour into a jar or container of your choice. I used a 16 oz jar. If you are canning, make sure to sterilize the jar and all parts. If you aren’t canning the jam, store in the fridge. It will stay for about two to three weeks.
