Flaxseed, Apple and Plum Muffins

Healthy_living_motts-banner1Do you want to add some extra fiber in your diet? Try these flaxseed apple and plum muffins. They are made with whole wheat flour and are filled with nutrients. They are also pleasantly sweet from the brown sugar, apple and plum. If you don’t have an apple on hand, use two plums instead. The plum used in the recipe also adds a nice color to the muffins and are also great for the whole family. Kids can enjoy them for a snack or breakfast. They are also easy to pack for lunch or a picnic.

According to Allison Topilow, MS, RD, CDN, Nutrition Consultant, these nutrient packed muffins have less fat and sugar than most muffins and provide vitamins and minerals, fiber and lots of flavor. Make a double batch and freeze some of the muffins for busy mornings. Nutritious and delicious!!! Ground flaxseeds provide additional fiber and omega-3 fatty acids.

Kid Friendly Tips: Have your child help out with the recipe by letting him measure and mix the ingredients together. Emphasize actions and the names of ingredients as you and your child are baking together. If your child likes a particular spice (e.g. ginger, nutmeg) or fruit, decide together if you want to add it. Since this recipe is versatile, any stone fruit can be replaced with the plum (e.g. peach, nectarine, etc).

Ingredients
1 cup of whole wheat flour
1/2 cup of wheat germ
2 heaping tablespoons of ground flaxseed
1/2 cup of light brown sugar
1 teaspoon of baking soda
1 teaspoon of baking powder
1/4 teaspoon of salt
1/2 teaspoon of cinnamon
1/4 teaspoon of ground all spice
1 egg
1 cup of low fat buttermilk
1/4 cup of canola oil
1 teaspoon of vanilla extract
1 apple, peeled cored and diced
1 plum, peeled and diced
1/2 cup of raisins

Preparation

  1. Preheat oven to 350 degrees.
  2. Combine flour through ground all spice in one bowl.
  3. In another bowl combine egg through extract.
  4. Add wet ingredients to dry ingredients. Fold in diced apple and plum.
  5. Fold in raisins.
  6. Pour batter into greased muffin tins. Bake the muffins at 350 degrees for about 12-15 minutes or until done. Yields 12 muffins.
  7. Let cool and eat!
