Wheat Germ Waffles with Cinnamon Chips

Are you looking for a healthy way to start the morning? Check out these easy wheat germ waffles with cinnamon chips! Don’t have cinnamon chips? Make the waffles without them or add your own topping such as white chocolate chips or raisins. These waffles are healthy, high in fiber and full of flavor. They are also super easy to make on a weekday morning, and easily heated up in the toaster the next day. They freeze well also!

According to Allison Topilow, MS, RD, CDN, Nutrition Consultant, wheat germ provides fiber, iron and protein and the whole wheat flour provides an additional fiber boost. Enjoy these nutritious waffles with a side of Greek yogurt or cottage cheese or a cup of low-fat milk for additional protein.  They are also delicious with peanut butter and banana slices!

Get your child involved in cooking this recipe! Discuss the ingredients when baking and instruct him one step at a time. A young child can mix and measure the ingredients with some help from a parent. During breakfast, read a book to your little one as you are eating together.

Carryover Picture Books: Waffles and Pancakes, Curious George Makes Maple Syrup

Ingredients
1 cup whole wheat flour
1/2 cup toasted wheat germ
1/2 cup light brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground all spice

1 1/4 cup low fat milk
1 egg
3 tablespoons canola oil
1/2 teaspoon of maple extract
1 teaspoon of vanilla extract

1/2 cup of cinnamon chips

Preparation

  1. In the bowl, combine flour through all spice.
  2. In another bowl, combine the milk through the extracts.
  3. Add wet ingredients to dry ingredients.
  4. Combine until moistened and there are no lumps. Fold in cinnamon chips.
  5. Heat up waffle iron and make waffles. If you don’t have a waffle iron, take out your skillet and get ready to flip!
