Now that summer is in full swing, it’s time for long hot days on the beach, campfires and my personal favorite – BBQs. Now, as many of you know, I am a terrible cook (and by terrible, I mean downright awful). So when I offer to bring something to contribute to a summer BBQ, the host usually pauses (or groans) and then asks if I would bring the paper goods, “store bought” chips and dip or wine.
But… one summer I found an old recipe that someone gave me for my bridal shower for Chocolate Saltines. Don’t let the randomness of the name fool you. They are delicious, festive, and kids love helping line up the saltines on the baking sheet. But here’s the best part – they only require 5 ingredients, just a few minutes to prepare, and they are the hit of the party. And by hit of the party, I mean people push to get to them and some have been known hide them in their purse (OK, maybe that’s just me…).
No joke. Instead of avoiding my kind invitation to bring something to a BBQ or dinner, people actually request “my” Chocolate Saltines. I can now waltz into a party all fancy pancy with my gourmet tray of dessert, and people who don’t know me think that I am an exceptional baker. Of course, I am diplomatic and do not correct them.
So, because I love you guys, here is the recipe* (There are many different websites that have variations, but all are pretty similar. *You can make them gluten free by substituting gluten-free crackers, although they are not quite as salty as Saltines).
