Flourless Chickpea Chocolate Loaf

Are you looking to sneak some nutrients into your child’s dessert? Try these chickpea mini chocolate loaves made with an entire can of chickpeas. The taste is mild with no “bean” taste, just a nice fudgy, chocolate flavor. The texture is slightly crumby so you may be cleaning up a small trail of crumbs after your little one!

My son won’t go near any beans but ate this chocolate loaf up in no time. It’s also a snap to prepare because everything is made in a blender! If you are dairy-free, you can easily substitute the milk with almond milk.

Get your child involved in the kitchen by letting him press “puree” on the blender. Your kids can also help measure and sprinkle the chips on top of each mini loaf. For a little extra color, use sprinkles instead of the chips.

According to Allison Topilow, MS, RD, CDN, Nutrition Consultant, this delicious dessert can also be eaten for breakfast; pair a slice with some yogurt and fruit for a well-balanced meal! The chickpeas provide fiber that will help keep your heart and digestive tract healthy! They also provide many different vitamins and minerals for good health! Canola oil provides a healthy source of fat. This recipe also provides protein from the chickpeas, eggs, and milk which will help keep tummies satisfied.

Ingredients
1 14 oz. can of chickpeas, drained and rinsed
1/3 cup of unsweetened cocoa powder
1/2 cup of granulated sugar
2 eggs
1 teaspoon of vanilla extract
2 tablespoons of canola oil
dash of cinnamon
1/4 cup of milk
1/2 cup mini chips

Preparation

  1. Preheat the oven to 350 degrees. Grease two mini loaf pans.
  2. In a blender, blend chickpeas through milk until smooth. If necessary add more milk one teaspoon at a time.
  3. Pour batter into two greased mini loaf pans.
  4. Sprinkle chips on top of loaf.
  5. Bake for 20-25 minutes or until toothpick comes out clean.
  6. Let cool and enjoy!
