Almond Butter: Two Ways

    Are you looking to make some gifts for the holidays? Make almond butter! It’s so simple!

    Buy unsalted roasted almonds (I like to control the salt) and process in your food processor until creamy, smooth and delicious. That’s it! Nothing else in the food processor besides those roasted almonds. I add ground cinnamon, vanilla powder and 1/4 teaspoon of kosher salt when processing. The almond butter is smooth and delicious and doesn’t separate! It keeps for about 2-3 weeks in the fridge.

    Rules for making almond butter:
    Don’t add any liquid of any kind when processing the almonds (e.g. vanilla extract, maple syrup, etc). Liquid while processing will ruin the almond butter. Once the almond butter is smooth to your desired consistency, you can add some other flavors such as melted chocolate (like I did for my chocolate almond butter), maple syrup, honey, etc.

    According to Allison Topilow, MS, RD, CDN, Nutrition Consultant, almonds are a great source of nutrition.  They contain fiber, protein, and many vitamins and minerals including Vitamin E and magnesium.  Although they are high in fat, most of the fat is unsaturated and heart-healthy. Almonds also help satisfy hunger and taste great 🙂  I love this recipe because it does not contain any additives…just pure almonds and wholesome ingredients! Try pairing almond butter with carrots and celery sticks or spread on a juicy apple for a delicious snack.  Almond butter and banana slices on whole grain bread makes a great breakfast or lunch.  Chocolate almond butter pairs well with banana slices for a yummy dessert.

    Kids can help by adding their own spices. Have them add cinnamon, ground all spice, maybe some ginger or a bit of ground cloves.

    Ingredients:
    3 cups of roasted almonds (I used unsalted so I could control the salt)
    1/4 teaspoon of salt (if you are using unsalted but it is optional)
    1/2 teaspoon of cinnamon
    1/2-3/4 teaspoon of ground vanilla powder

    For chocolate almond butter
    1.5 tablespoons of Dutch Cocoa Powder (unsweetened)
    3-4 teaspoons of melted chocolate (from semi sweet chocolate chips)

    Preparation:

    1. Add roasted almonds to the food processor. You can add up to 3 or 4 cups depending on the size of your food processor. Add cinnamon, ground vanilla powder and salt if using.
    2. Process until creamy and smooth. This will take about 10-15 minutes. The food processor will become warm so stay close by to it.  Be patient, it is worth the wait! Add ground spices and salt anytime during the process of blending.
    3. Pour into jars and refrigerate.

    If you are making chocolate almond butter:
    After Step 2 (make sure your almond butter is to your desired consistency), add in cocoa powder. Process until smooth. Add 3 teaspoons of melted chocolate (add more if you want extra sweetness). Process until smooth.

    Add to jars and refrigerate.
