Bran Cake Pops

My daughter was requesting bran pancakes one morning. I wasn’t in the mood to make the pancakes so I decided to make them into cake pops instead. For kids, eating lollipops for breakfast is always a fun thing! These cake pops are sweet, hearty and super healthy so everyone in the family can have a bran cake pop for breakfast. I didn’t glaze these pops but they would be even more delicious with a maple glaze.

Allison Topilow MS, RD, CDN, nutrition consultant, recommends getting your boost of fiber and whole grains from these lightly sweetened cake pops. Pair with low-fat cottage cheese or yogurt and fresh fruit for a well-balanced breakfast! Or enjoy with a cup of low-fat milk for an afternoon snack.

Don’t have a cake pop pan? Make them into pancakes or waffles.

Kid Friendly Tips: Have your child help you with measuring and mixing the ingredients for the cake pops. Be creative with different kinds of healthy cake pops and mix in some fun ingredients (dried fruits, nuts, mini chips). Discuss healthy eating and explain what “bran” is and how it’s good for your body and your tummy.

With this recipe, you can work on expanding vocabulary, sequencing, answering “wh” questions, turn taking, and much more.

Have your child help with a glaze by combining 1 cup of confectioners sugar, 1-2 teaspoons of milk, a tablespoon of maple syrup and a teaspoon of vanilla extract.  Have your child dip his or her cake pop in the glaze for extra sweetness. If you don’t have the ingredients for the glaze, just pair the pops with some pure maple syrup on the side.

Ingredients:
3/4 cup of whole wheat flour

1/4 cup of unprocessed bran

1/4 cup of light brown sugar

1 teaspoon of baking powder

1/2 teaspoon of baking soda

1/4 teaspoon of salt

1/2 cup of raisins

1/2 cup of low-fat milk

1 egg

1 tbsp of canola oil

1 teaspoon of vanilla extract

1/2 teaspoon of maple extract

Preparation:
1. Preheat oven to 375 degrees. Mix flour, bran, baking powder, baking soda and salt with a whisk.

2. In another bowl mix remaining ingredients with a whisk.

3. Add wet ingredients to dry ingredients until moistened.

4. Let batter sit for 20 minutes or so on the counter. It will make them moister.

4. Add batter to well greased cake pop pan. The recipe yields about 10-12 cake pops.

5. Bake for about 8-10 minutes at 375 degrees or until done.

6. Take a lollipop stick, dip it into maple syrup and then stick it in the cake pop.

7. Let cool and eat! You can glaze the cake pops or have it by itself. Tastes like a bran muffin but its more fun on a stick 🙂
