As you know from Heather’s announcement a few weeks ago, I have become a Certified Health Coach. I am looking forward to providing you with lots of useful tips on nutrition and managing mealtime and snacks on a busy schedule.

I’m sure by now, you have all dug deep into your leftover Halloween candy stash and are getting a wee bit too comfortable popping a Hershey’s here and a Butterfinger there! They are minis, so they don’t count – right?

So here is the deal. I don’t promote denying yourself any food that brings you pleasure. That said, I DO advocate finding healthier alternatives. Here is a recipe for a more natural sweet treat that even got Heather to put down her Nutella jar!

It’s super easy to make and is made with healthier ingredients than the typical cookie/brownie/cake recipes you will find out there. Give it a try!

You might even consider donating that extra Halloween candy. Out of sight, out of mind! (or more like out of reach!)

Peanut Butter Bars

1/2 cup peanut butter (can substitute almond butter if there are peanut allergies)
2/3 cup pure maple syrup
1 tablespoon coconut oil (melted)
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups rolled oats
1 cup crisp rice cereal (l like to get brown rice crispies for a healthier version)
1/2 cup chocolate chips

– Preheat oven to 350. Line an 8 inch square baking pan with parchment paper, letting the ends overhang a little and spray lightly with cooking spray.

– In a large bowl, stir together the peanut butter and maple syrup until smooth. Mix in the oil, vanilla and salt.

– Mix in the oats and cereal. Add almonds and chocolate chips.

– Transfer the mixture to prepared pan and press in very firmly and evenly as you can. bake 22 to 25 minutes, until edges appear golden.

– Let cool completely in pan. Remove from pan by pulling up sides of parchment. Best way to cut is to use a chef’s knife and press down in one firm motion
