Vegetable Obsession

For those of you who don’t know, I am obsessed with vegetables. Specifically with making sure I eat enough of them on a daily basis. Experts agree that for an optimal diet you need between 5 and 13 servings of vegetables per day. That works out to 2 1/2 to 6 1/2 CUPS of vegetables PER DAY.

I know… how is it even possible to get 6 1/2 cups of vegetables in every day?!

I’ll tell you how! You just make sure to include vegetables at every meal (and yes, that includes breakfast).

I have created a 3-day healthy meal plan that is veggie focused and designed with the busy mom in mind – meaning the recipes are EASY! Included is a shopping list for the three days, a prep guide, and the actual recipes all laid out for you by day.
