Irish Soda Bread

What could be better on a cold winter morning than warm, sweet Irish Soda Bread? This bread is moist, full of raisins, and perfect by itself or toasted with cinnamon butter or homemade jam. After many searches for the perfect recipe for Irish Soda Bread I found it here at allrecipes.com.

I modified it slightly by substituting low fat ingredients and omitting the caraway seeds. I also added a teaspoon of vanilla extract to the batter. The bread comes out of the oven warm and absolutely amazing. It’s excellent right out of the oven and even after a couple of days.

According to Allison Topilow, MS, RD, CDN, Nutrition Consultant, enjoy a slice of this Irish Soda bread with a cup of low-fat milk or 1/2 cup low-fat cottage cheese to provide additional protein at breakfast or snack time. The raisins will provide a little iron as well as fiber. For an additional fiber boost, experiment with substituting some whole wheat flour for the all- purpose flour. Homemade bread is a healthful alternative to packaged varieties because there are no preservatives and you know exactly what you are putting into it rather than trying to figure out what half the things are on a long list of ingredients!

This bread is excellent as french toast the next day!

Irish soda bread 2Kid Friendly Tips: Have your child help out in the kitchen by combining the ingredients together. Describe how the batter feels (e.g. dry, sticky, etc). As you are making the bread, model simple language and focus on expanding vocabulary and reviewing the steps to the recipe. Take some pictures with your camera so you can review the steps of the recipe after you bake the bread. Read the books below while you are eating the bread.

Ingredients:

  • 4 cups all-purpose flour
  • 1/2 cup of granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3 cups raisins
  • 2 eggs, lightly beaten
  • 1 teaspoon of vanilla extract
  • 1 1/4 cups low fat buttermilk
  • 1 cup low fat sour cream

Preparation:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch round cake pan.
  2. In a mixing bowl, whisk flour, sugar, baking powder, baking soda, salt and raisins..
  3. In another small bowl, mix eggs, vanilla extract, buttermilk and low fat sour cream. Stir the liquid mixture into flour mixture just until flour is moistened.
  4. The dough will be sticky which is what you want. Place batter in greased cake pan.
  5. Cut a 4×3/4 inch deep slit in the top of the bread.
  6. Bake for 65 to 75 minutes until done.
  7. Take bread out of pan and let cool on the cooling rack.
